Tomato and Basil Salad
You will need:
4 medium tomatoes, sliced
2 Tbsp chopped fresh basil
2 Tbsp balsamic vinegar
1 Tbsp olive oil
1/2 tsp sugar
1/4 tsp pepper
2 Tbsp shredded fat free or part skim mozzarella cheese
2 tsp shredded or grated Parmesan cheese
Directions:
1. Arrange tomatoes slices on a plate. Sprinkle with basil.
2. Whisk vinegar, oil, sugar and pepper together to make dressing.
3. Sprinkle mozzarella and parmesan over tomatoes.
4. Serve dressing on the side or add just prior to serving.
