Mexican Confetti Rice
Mexican Confetti Rice
You will need:
2 tsp olive oil
½ cup chopped onion
1 garlic clove minced
1 cup rice
¾ cup chopped chayote
2/3 cup fresh corn kernels
½ c chopped carrot
2 c water
¾ t salt
Directions:
1. Heat oil in large saucepan over medium high heat.
2. Add onion; sauté 2 minutes. Add garlic sauté and 1 minute.
3. Stir in rice, chayote, corn and carrot. Sauté 3 minutes.
4. Stir in water and salt and bring to a boil. Cover, reduce heat and simmer 20 minutes or until rice is tender.
