Peach Fig Cobbler With Ginger and Southern Comfort
3# peaches, peeled and sliced
fresh figs, destemmed and quartered (optional, but nice)
2 tsp grated fresh ginger
1 C. sugar
1/2 tsp nutmeg
1 1/2 Tbl cornstarch
pinch salt
6 Tbl Southern Comfort
1 C flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
2 T sugar
1/4 # cold butter, cut into small pieces
1 egg
4 T milk
Method:
Preheat oven to 375 degrees. Butter an 11 x 7 inch pan. Combine peaches, figs, ginger, nutmeg, sugar, cornstarch and salt and mix well. Pour into buttered pan. In medium sized bowl, mix flour, baking powder, cinnamon and sugar. Work in flour until it resembles coarse cornmeal. In small bowl, beat egg, then whisk in milk. Add egg mix to flour mix and lightly combine. Spoon over fruit evenly. Bake in preheated oven about 30-45 minutes or until crust is nicely browned and fruit begins to bubble all over
