Chunky Apple Cake
You will need:
1 cup all purpose flour
½ tsp nutmeg
½ tsp cinnamon
¼ tsp light salt
½ cup Splenda
½ cup sugar
3 Tbsp light butter, softened
1 egg
2 Tbsp skim milk
2 large baking apples, cored & sliced
1 tsp Splenda
½ tsp cinnamon
Directions:
1. Pre-heat the oven to 350 degrees. Spray an 8 by 8 inch baking pan with nonstick cooking spray.
2. In a medium bowl, whisk together the flour, nutmeg, cinnamon and salt.
3. In another bowl, with an electric mixer at medium speed, beat the sugar and the margarine together until fluffy. Beat in egg and milk. Add flour mixture to the margarine mixture in thirds. Stir in apples.
4. Spread in pan.
5. In a small bowl, combine Splenda and cinnamon for the topping and sprinkle over batter. Bake until brown, 40 – 45 minutes.
